offline processing

I'm building my first website with a store--we are hosting here.

My client wants to do offline cc processing---they want the cc numbers emailed to them and will process in the brick and mortar wine shop.

How does this work?

Here's what I know: customer goes to site, uses the store software to order and a email is sent to customer to confirm order and email is sent to store's email address. Store wants to then process cc number by hand.

Here's what I don't know:
Is FQ setup for encripting email from  store software?
How does this work exactly?
If cc number is sent via encription, how does the end user make it readable?

Any help would be useful...I've tried to research this,but all the info I find is about merchant accounts, etc.
