transfer data from old host to futurequest

Hi,
Anyone have any nifty suggestions for bundling up efficiently all of the data on my old host (XO Communications) to easily transfer to my new FutureQuest site.

If tar is the best way, can you give me the proper flags so I don't muck it up?
